
Serves 6
Ingredients:
- 500g (1.1 lbs) pasta (penne or rigatoni works best)
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 750g (1.65 lbs) chicken mince
- 2 tbsp Cajun seasoning (or to taste)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 300ml (1¼ cups) chicken stock
- 250ml (1 cup) double cream or cooking cream
- 100g (1 cup) grated parmesan or cheddar
- Salt & pepper to taste
- Fresh parsley or spring onion for garnish
Instructions:
- Cook pasta in salted water, drain and reserve ½ cup pasta water.
- In a large pan, heat oil. Sauté onion and garlic until soft.
- Add chicken mince and Cajun seasoning. Cook 6–8 mins until browned.
- Add peppers. Cook another 3–4 mins until tender.
- Pour in chicken stock, simmer 3–4 mins.
- Stir in cream and cheese. Add cooked pasta and mix well.
- If too thick, loosen with pasta water. Taste and adjust seasoning.
- Garnish with parsley or spring onions before serving.
