Cajun Chicken Mince Pasta

Serves 6

Ingredients:

  • 500g (1.1 lbs) pasta (penne or rigatoni works best)
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 750g (1.65 lbs) chicken mince
  • 2 tbsp Cajun seasoning (or to taste)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 300ml (1¼ cups) chicken stock
  • 250ml (1 cup) double cream or cooking cream
  • 100g (1 cup) grated parmesan or cheddar
  • Salt & pepper to taste
  • Fresh parsley or spring onion for garnish

Instructions:

  1. Cook pasta in salted water, drain and reserve ½ cup pasta water.
  2. In a large pan, heat oil. Sauté onion and garlic until soft.
  3. Add chicken mince and Cajun seasoning. Cook 6–8 mins until browned.
  4. Add peppers. Cook another 3–4 mins until tender.
  5. Pour in chicken stock, simmer 3–4 mins.
  6. Stir in cream and cheese. Add cooked pasta and mix well.
  7. If too thick, loosen with pasta water. Taste and adjust seasoning.
  8. Garnish with parsley or spring onions before serving.
