Ingredients:
- Dry:
- 2 cups (200g) rolled oats (gluten-free if needed)
- ½ cup (60g) chopped nuts (pecans, almonds, or walnuts)
- ¼ cup (30g) sunflower seeds or pumpkin seeds
- 1½ tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves (optional, for more spice)
- **Pinch of salt
- Wet:
- 2 tbsp coconut oil or unsalted butter, melted
- 3 tbsp maple syrup or honey
- 1½ tbsp molasses (blackstrap or regular, for deep gingerbread flavor)
- 1 egg white, lightly beaten (for clusters)
- → or use 1 tbsp ground flax + 2½ tbsp water for vegan version (let sit 5 min to gel)
- Optional Add-ins (after baking):
- ¼ cup dried cranberries, raisins, or chopped dates
- 2 tbsp mini dark chocolate chips or chopped dark chocolate
Ingredients:
1. Preheat fan oven to 150°C (300°F). Line a baking tray with parchment paper.
2. Mix the dry ingredients:
In a large bowl, combine:
• Oats
• Nuts
• Seeds
• Spices
• Salt
3. Mix the wet ingredients:
In a separate bowl or small pan, gently warm:
• Coconut oil
• Maple syrup
• Molasses
Stir until fully combined. Let it cool slightly if hot, then whisk in:
• Egg white (or flax egg if using)
4. Combine wet and dry:
Pour the wet mixture over the dry ingredients. Stir thoroughly until everything is evenly coated.
5. Press into tray:
Spread the mixture on your lined tray, then firmly press down using the back of a spatula or your hands to create one even, compact layer.
6. Bake (no stirring!):
Bake in the fan oven at 150°C for 25–30 minutes. Rotate the tray halfway through to ensure even browning, but do not stir—this is key to keeping the clusters intact.
7. Optional: Dry out further:
Once golden at the edges, turn off the oven and leave the tray inside for an extra 10–15 minuteswith the door slightly ajar. This helps dry and crisp the granola even more.
8. Cool completely:
Let the granola cool fully on the tray before touching it—it will crisp up as it cools. Then gently break it into clusters of your desired size.
9. Add mix-ins (optional):
Stir in dried fruit or chocolate chips once completely cool.
