Gingerbread Mug Cake

Serves 1

Ingredients:

  • 6–8 ginger biscuits (about 60g)
  • 3 tbsp milk (any kind)
  • 1 tbsp butter or oil
  • 1 tbsp sugar (optional – depending on how sweet your biscuits are)
  • Optional add-ins:
  • 1/2 tsp vanilla extract
  • 1 tsp golden syrup or honey for extra gooeyness
  • Pinch of cinnamon or nutmeg

Instructions:

  1. Crush biscuits (crushed to fine crumbs – using a blender is recommended)
  2. Add wet ingredients
    • Pour in the milk and melted butter (or oil).
    • Add any optional flavorings (vanilla, syrup, spices).
    • Mix thoroughly until it forms a smooth, thick batter.
  3. Microwave
    • Microwave on high for 60–70 seconds.
    • The cake should puff slightly and look moist but set.
  4. Serve:
  5. Let it sit for a minute (it’ll be hot!). Enjoy as-is, or top with whipped cream, yogurt, or a scoop of ice cream.
