Lentil and Red Pepper Soup

Serves 4 – 6

Ingredients:

  • 1 cup of red lentils
  • 4 cups water
  • 2 red bell peppers, chopped and deseeded
  • 1 tsp turmeric powder
  • 1 – 2 tsp chicken bouillon powder
  • 1 tbsp neutral oil (e.g. olive oil, rapeseed oil, vegetable oil)

Instructions:

  1. Rinse the lentils and put in a large pot with the water.
  2. Cook the pot of lentils on the stove on a high heat until the water starts to boil.
  3. Lower the heat and cook the lentils on a simmer for 15 – 20 minutes. The lentils should be soft.
  4. In a food processor, add the cooked lentils, red bell peppers, turmeric powder, chicken bouillon powder and oil.
  5. Blend until smooth.
  6. Serve into bowls.
