Rosemary and Thyme Fries

Serves 4

Ingredients:

  • 1 kg (2.2 lbs) potatoes (e.g., Russet or Maris Piper), peeled or scrubbed
  • 2 tbsp olive oil
  • 1 tbsp cornstarch (cornflour)
  • 1 tsp garlic powder
  • 1½ tsp dried rosemary
  • ¾ tsp dried thyme
  • ¾ tsp salt (plus more to taste)
  • ¼–½ tsp black pepper
  • Optional: pinch of chili flakes or paprika

Instructions:

  1. Preheat Oven:
    Set your fan oven to 200°C (392°F).
  2. Cut the Fries:
    Slice potatoes into matchsticks or wedges about 1 cm thick.
  3. Soak the Fries (Recommended):
    Soak in cold water (in the fridge is fine) for 30 minutes to 24 hours.
    Drain and dry thoroughly.
  4. Coat with Cornstarch:
    Toss dry fries in 1 tbsp cornstarch to lightly coat.
  5. Season and Oil:
    Add olive oil, garlic powder, dried rosemary, dried thyme, salt, and pepper. Toss well to coat evenly.
  6. Arrange and Bake:
    Spread fries in a single layer on a lined tray. Avoid crowding.
    Bake for 30–40 minutes, flipping halfway through, until golden and crispy.
  7. Serve:
    Taste and season with extra salt if needed. Serve hot with your favourite dip or garnish.
