
Serves 4
Ingredients:
- 1 kg (2.2 lbs) potatoes (e.g., Russet or Maris Piper), peeled or scrubbed
- 2 tbsp olive oil
- 1 tbsp cornstarch (cornflour)
- 1 tsp garlic powder
- 1½ tsp dried rosemary
- ¾ tsp dried thyme
- ¾ tsp salt (plus more to taste)
- ¼–½ tsp black pepper
- Optional: pinch of chili flakes or paprika
Instructions:
- Preheat Oven:
Set your fan oven to 200°C (392°F). - Cut the Fries:
Slice potatoes into matchsticks or wedges about 1 cm thick. - Soak the Fries (Recommended):
Soak in cold water (in the fridge is fine) for 30 minutes to 24 hours.
Drain and dry thoroughly. - Coat with Cornstarch:
Toss dry fries in 1 tbsp cornstarch to lightly coat. - Season and Oil:
Add olive oil, garlic powder, dried rosemary, dried thyme, salt, and pepper. Toss well to coat evenly. - Arrange and Bake:
Spread fries in a single layer on a lined tray. Avoid crowding.
Bake for 30–40 minutes, flipping halfway through, until golden and crispy. - Serve:
Taste and season with extra salt if needed. Serve hot with your favourite dip or garnish.
