Sunday Roast Egg Fried Rice

Serves 6 – 8

Ingredients:

Cooked Meats

• 650 g cooked duck, beef, and chicken, chopped bite-size

• ~150 g cooked pig in blankets and stuffing balls, chopped

• Slice sausages

• Quarter stuffing balls

Roasted Vegetables

• ~200 g roasted parsnips and carrots, chopped bite-size

Fried Rice

• 900 g microwaveable rice

• 4 large eggs

• 5–6 spring onions, sliced

• 3 cups frozen mixed vegetables (peas, carrot, sweetcorn)

• 3–4 cloves garlic, minced

Seasonings & Oils

• 3 tbsp light soy sauce

• 1½ tsp dark soy sauce (optional, for colour)

• 2 tbsp oyster sauce

• 1–1½ tsp white pepper (to taste)

• 3–4 tbsp neutral oil (rapeseed)

• 1–2 tbsp chilli oil (to taste)

• A few drops sesame oil (optional, very light)

Instructions:


    1. Prep Everything

    • Chop all cooked meats into bite-size pieces.

    • Chop roasted parsnips and carrots to similar size.

    • Optional: lightly toss meats (not stuffing or roast veg) with 1 tsp light soy + pinch white pepper.

    2. Prep the Rice

    • Microwave rice 20–30 seconds less than packet instructions.

    • Break up clumps thoroughly so it’s dry and loose.

    3. Cook the Fried Rice

    1. Heat 3–4 tbsp neutral oil in a large wok or wide pan over high heat.

    2. Add garlic → fry 10–15 seconds until fragrant.

    3. Add frozen vegetables → stir-fry 2–3 minutes, letting moisture cook off.

    4. Push veg aside; add a little oil if needed.

    5. Crack in eggs → scramble until just set.

    6. Add rice → toss until evenly mixed.

    7. Add seasonings:

    • 3 tbsp light soy

    • 1½ tsp dark soy

    • 2 tbsp oyster sauce

    • 1–1½ tsp white pepper

    8. Stir-fry 3–4 minutes until rice is hot, separated, and lightly toasted.

    4. Add Heat & Fillings

    9. Drizzle 1 tbsp chilli oil around the pan → toss to coat the rice evenly.

    10. Add cooked duck, beef, chicken, pig in blankets, stuffing, and roasted parsnips & carrots.

    11. Stir-fry on high heat 1–2 minutes only, just to heat through and lightly char.

    5. Finish

    12. Add spring onions.

    13. Optional: finish with a few drops of sesame oil.

    14. Taste and add a little more chilli oil if you want extra heat.
