
Serves 1 – 2
Ingredients:
- 2 tortilla wraps
- 4 – 6 tbsp cheese and chive dip (you can also use garlic dip or sour cream and chive dip)
- 1 tbsp tomato puree
- 2 tbsp tomato passata
- 1/2 tsp Italian herb seasoning
- 1/2 cup grated mozzarella
- 8 slices of salami/pepperoni
- 1/2 cup black olives
- 2-3 meatballs, cut in quarters
Instructions:
- Preheat the fan oven to 200°C.
- Place one tortilla wrap on baking parchment.
- Spread the cheese and chive dip onto the tortilla wrap.
- Place the second tortilla wrap on top.
- Mix together the tomato puree, tomato passata and the Italian herb seasoning.
- Spread the tomato mix on top of the tortilla wrap.
- Sprinkle the tortilla with the mozzarella cheese.
- Place the pepperoni, meatballs and black olives on top.
- Transfer to a baking tray and bake for 13-15 minutes, until the cheese is melted and golden brown.
- Cut in slices and serve immediately.
Note: You can use other toppings to suit your preferences. Here are some other ideas:
- Margherita – grated mozzarella, tomato sauce, fresh basil, olive oil
- Pepperoni & Hot Honey – pepperoni, grated mozzarella, drizzle of hot honey
- Mushroom & Truffle – mixed mushrooms, grated mozzarella, garlic oil, truffle oil
- BBQ Chicken – Replace tomato sauce with BBQ sauce, grilled chicken, red onion, grated mozzarella, cilantro
- Prosciutto & Arugula – Grated mozzarella, prosciutto, arugula, shaved Parmesan, olive oil
- Four Cheese – grated mozzarella, grated gorgonzola, grated Parmesan, sliced provolone
- Spicy Sausage & Roasted Red Pepper – Italian sausage, roasted red peppers, grated mozzarella, chilli flakes
- Hawaiian – Ham or prosciutto, pineapple, jalapenos, grated mozzarella
- White Pizza – Use ricotta and minced garlic instead of tomato sauce, grated mozzarella, olive oil, spinach or artichoke
- Fig & Goat Cheese – Use Fig jam instead of tomato sauce, goat cheese, caramelized onions, arugula
